Recipe Ingredients for Healthy Pumpkin Muffins

28 oz of pumpkin puree
4 cups whole wheat Flour
2 cups rolled oats
2 cups white sugar
1 tablespoon baking soda
1 teaspoon baking powder
1 tablespoons ground cloves
1 tablespoons ground cinnamon
1 tablespoons ground nutmeg
1 tablespoon ground ginger
2/3 cup applesauce
5 eggs

Recipe Directions for Healthy Pumpkin Muffins

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 24ish muffin cups or line with paper muffin liners.

  2. In a large bowl, stir together flour, oats, sugar, baking soda, baking powder, cloves, cinnamon, nutmeg, and ginger. In a separate bowl, beat together pumpkin puree, applesauce and eggs. Stir pumpkin mixture into flour mixture until smooth.

  3. Scoop batter into prepared muffin cups.ake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.
