dessert/quick bread Based on my favorite pumpkin bread recipe fo all time... may end up NOT subbing whole wheat for regular flour - drier texture with only .1 g more fiber...

Recipe Ingredients for healthy pumpkin bread

1 3/4 c flour
1 3/4 c whole wheat flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
1 tsp allspice
1/2 tsp ground cloves
2 1/4 c sugar
2/3 c water
1/2 c oil
1/2 cup unsweetened applesauce
3 eggs
4 egg whites
16 oz pumpkin

Recipe Directions for healthy pumpkin bread

combine dry. combine wet. pour into sprayed loaf pans. bake on 350 unti ltoothpick comes out clean (approx 1 hour). cool on racks.
