super healthy...not as tasty as how i usually make it, but i'm going to find ways to dress it up!!

Recipe Ingredients for HEALTHY PEPPER POTATO FRITATTA

1 1/2 cups egg beaters
1 tbsp. olive oil
9 g. PAM cooking spray
35 g. red bell pepper
35 g. green bell pepper
35 g. onion
150 g. potato
1 tbsp. salt
2 tsp. black pepper
2 tsp. cayenne pepper

Recipe Directions for HEALTHY PEPPER POTATO FRITATTA

  1. chop peppers and onions

  2. thinly slice potatoes into rounds

  3. get out the egg beaters

  4. preheat the broiler

  5. spray the pan with PAM add a little (1-1/2 tsp) olive oil

  6. add some onion *just a bit--maybe 15 grams,

  7. add a pinch of salt

  8. sautee it a bit

  9. add the potatoes

  10. cover and do not touch for a few minutes so that potatoes brown up and steam through a bit

  11. remove the lid, let them brown a bit longer

  12. put them on a plate on the side

  13. sautee the rest of the onions with the peppers and a little salt

  14. once soft, remove veggies

  15. spray a little more pam and add a touch of olive oil

  16. put the potatoes in the bottom

  17. top with the peppers

  18. add salt and black and cayenne pepper

  19. shake or whisk the egg beaters vigorously

  20. add

  21. wait for the mixture to set

  22. put under broiler to finish the top
