Recipe Ingredients for Healthy Peanut Butter Oatmeal Cookies

1 cup Oats, Rolled, Quick Cooking
1/2 cup all-purpose flour (Eagle Mills Ultragrain)
1/2 tsp salt
1/2 tsp baking soda
1 1/4 cups natural peanut butter
2 tbsp skim milk
1/2 cup honey
2 egg whites
2 tsp vanilla
1/2 tsp almond extract
2 tbsp ground flaxseed
2 tbsp soy protein powder
1 tablespoon light margarine
1/4 cup raisins
1/4 cup sunflower seeds

Recipe Directions for Healthy Peanut Butter Oatmeal Cookies

  1. Place raisins in a small bowl. Put enough warm water to cover; plump for 5-20 minutes. Drain well and set aside.

  2. In a large bowl, combine dry ingredients. Cream together moist ingredients in a separate bowl, then pour into dry ingredients. Mix together by hand, mixture will be thick.

  3. Cover and chill for twenty minutes.

  4. Drop batter by teaspoonfuls onto a parchment lined baking sheet (makes 2 dozen); flatten with a fork.

  5. Bake on 375 for 8-12 minutes. Watch closely, honey makes cookies brown faster. May need to be covered with foil for last few minutes of baking.
