I took the idea from puzzle9327's recipe and modified it to give a substantial breakfast muffin!

Recipe Ingredients for Healthy orange cranberry Muffins!

75 g Craisins, Sweetened Dried Cranberries
1 egg
2 tablespoons fat-free sour cream
2 tablespoons brown sugar
3 tablespoons splenda
2/3 cup orange juice
2 tablespoons chopped walnuts
120 g (1 cup) robin hood nutri flour blend
1/2 cup raw oatmeal
1/2 cups wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 tablespoon orange zest

Recipe Directions for Healthy orange cranberry Muffins!

  1. Soak the dried cranberries in boiling water.

  2. In a large bowl, beat the egg with the orange juice, the zest, the sugars and the sour cream.

  3. Add the flour, the baking soda, baking powder, wheat germ and oatmeal, as well as the ginger and cinnamon.

  4. Fold over carefully until well mixed. Add cranberries and walnuts, mix again.

  5. Spray some pam into 8 of the 12 holes of the muffin tins. Spoon in the mix.

  6. Bake at 350 for around 20mins.

  7. N.B. this recipe could easily make 12 smaller muffins.
