Recipe Ingredients for Healthy Oatmeal Cookies

1 cup whole wheat flour
1 1/2 cups rolled oats
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1/2 tsp nutmeg (optional)
1/2 cup honey
1/2 cup oil
1 tbsp molasses
1 egg
1 tsp vanilla
1/2 cup raisins
1/2 cup walnuts

Recipe Directions for Healthy Oatmeal Cookies

In large bowl mix all dry ingredients together. In medium bowl mix all wet ingredients together (beat the egg with 1 tbsp water before adding to other wet ingredients). Mix wet ingredients with dry ingredients. Cool the mix for 20 minutes in the fridge. If mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white. Bake in 325 degree oven (lower temperature due to honey which burns more easily). Drop by teaspoonfuls onto baking sheet. Press with fork to ensure even cooking. Bake 15 to 20 minutes until golden on the bottom.
