Modified from Quaker Oats recipe. Reduce granulated sugar to 1/4 cup and add 1/4 cup brown rice syrup and an additional 1/3 cup wheat germ for a healthier cookie.

Recipe Ingredients for Healthy Oatmeal Apricot Cranberry Cookies

1 cup butter
1 cup brown sugar
1/3 cup sugar
2 eggs
1 teaspoon vanilla
1/4 cup wheat germ
1/2 c almond meal
1 cup wheat flour, whole grain
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups old fashioned oats
1/2 cup dried apricots
1/2 cup dried cranberries

Recipe Directions for Healthy Oatmeal Apricot Cranberry Cookies

  1. Heat oven to 350

  2. Beat butter and sugars until creamy

  3. Add eggs and vanilla, beat well.

  4. Add combined dry ingredients and mix well.

  5. Stir in oats and fruit, mix well.

  6. Drop by rounded tablespoons onto ungreased cookie sheet.

  7. Bake 10 min or until golden brown.

  8. Cool 1 minute on cookie sheet, then transfer to wire rack.
