Recipe Ingredients for Healthy Oat Stir Fry

1/2 cup oatmeal, steel cut
2 tablespoons canola oil
1 cup diced onion
1 garlic clove
1 red pepper, seeded and diced
1 zucchini, sliced
1/2 cup chopped mushrooms
1 pound tomatoes

Recipe Directions for Healthy Oat Stir Fry

  1. Put oatmeal in saucepan and pour 2 cups boiling water. Let stand for one hour and drain.

  2. Heat oil in pan and add onion and garlic. Cook two minutes. Add zucchini and mushrooms and cook two minutes. Add oatmeal and tomatoes and simmer for three minutes.
