Tasty, high-fiber and low fat muffins. Lots of oats and oat bran!

Recipe Ingredients for Healthy oat muffins

3 cups white flour
1 3/4 cups whole wheat flour
4 cups wheat bran
3 cups oats
1 1/4 cup sugar
3 tbsp. baking powder
2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3 3/4 cups milk
2/3 cup oil
1 cup applesauce
5 eggs
2 1/2 cups currants or raisins (optional)

Recipe Directions for Healthy oat muffins

  1. Preheat oven to 400 degrees F. Line muffin cups with paper liners and set aside.

  2. Combine all dry ingredients in large bowl.

  3. Combine remaining ingredients in large bowl and mix well.

  4. Stir in the Dry Ingredients and stir just until dry ingredients are moistened; the batter will be lumpy. Spoon muffin tins.

  5. Bake at 400 degrees for 13-15 minutes until muffins are golden brown.
