A healthy, non-fat vegetable soup, great for weight loss. I believe originally adapted from Weight Watchers.

Recipe Ingredients for Healthy Non-fat Vegetable Soup

1 medium (2-1/2" dia) Onions
2 medium raw Leeks
4 stalk, medium (7-1/2" - 8" long) Celery
4 medium Carrots
2 parsnip (9" long) Parsnips
1 cup, cubes Yam
2 tbsp Extra Virgin Olive Oil
28 oz Diced Tomatoes
14 oz Cannellini Beans
2 cup, chopped Chard, Swiss
2 tbsp Parsley
8 cup Chicken Broth
1 dash Pepper, Black
1 tsp, crumbled Bay Leaf
0.25 tsp, ground Basil, Dried
1 cup, chopped Broccoli
1 cup Yellow Squash

Recipe Directions for Healthy Non-fat Vegetable Soup

  1. In large soup pot, heat 2 tbsp olive oil, add onions, leeks, celery, carrots, parsnips and sweet potoato and stir over medium heat until onion is translucent.

  2. Add other ingredients except for broccoli and yellow squash and bring all ingredients to a boil and simmer, partially covered for about 20-30 minutes or until veggies are tender. Add broccoli and yellow squash or zucchini during last 5-10 minutes of cooking so they don't get mushy.

  3. Remove Bay leaf before serving. Sprinkel with grated Parmesan cheese.
