This is the basic recipe for healthy muffins but obviously you will need to add your flavourings and fillings - I've made some suggestions below.

Recipe Ingredients for Healthy Muffins

200 g wholewheat flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
100 g brown sugar
1 egg
50 ml peanut oil
75 ml soy milk

Recipe Directions for Healthy Muffins

  1. sift all dry ingredients into a bowl

  2. stir in sugar (muscovado sugar would be best)

  3. stir in FILLING - chocolate chips or fruits or spices (you will need to add these calories onto the basic recipe)

  4. whisk all wet ingredients in a jug. if you are vegan you can subsitute the egg for a banana - i would liquidise this in a food processor (if you want to make banana and date muffins I'd liquidise these too)

  5. whisk in FLAVOURING - so vanilla essence or lemon juice or whatever (again, you will need to add these calories in)

  6. stir wet mix into dry until combined (don't over mix)

  7. fill paper cases or muffins moulds right to the top

  8. BAKE AT 180-200C FOR 10-12 MINS

  9. **FOR BANANA, DATE AND WALNUT MUFFINS:

  10. stir chopped walnuts in with sugar

  11. add a tsp of allspice to dry mix

  12. use 1 whole banana instead of an egg and liquidise with wet ingredients - also put the dates into the food processor so they get chopped up nice and fine

  13. you might want to add a tbsp of rum or brandy too (!)

  14. while still warm from the oven make a simple glaze from a couple of tbsps of orange juice and a tsp of honey - prick muffins and then spoon over glaze

  15. **FOR BLUEBERRY MUFFINS

  16. add 75g of blueberries with the sugar

  17. add tsp of vanilla essence to wet ingredients

  18. **FOR CHOCOLATE MUFFINS

  19. substitute 30g of the flour or cocoa powder (or carob - I use half and half because cocoa has that great flavour but the carob gives it a great deep chocolate colour)

  20. stir in walnuts and while/dark chocolate chips with the sugar

  21. **FOR RASPBERRY MUFFINS

  22. stir in raspberries and white chocolate chips with the sugar

  23. add a tsp of vanilla essence to wet ingredients

  24. **FOR LEMON MUFFINS

  25. you will need 1 lemon - stir lemon rind in with sugar

  26. squeeze lemon juice into wet ingredients

  27. put one spoon of mix into muffin case, then 1 tsp of lemon curd, then top with another spoon of mix - (lemon curd will add about 40cals to each muffin)

  28. anyway - you get the idea! you can experiment!
