A version of Moussaka that won't break your calorie bank!

Recipe Ingredients for Healthy Moussaka

16 oz chicken, ground
2 cups tomato sauce
1 onion, diced
6 oz red wine
2 cloves garlic
2 tsp cinnamon
1/4 cup oregano, fresh
1/4 cup basil, fresh
1 medium eggplant, sliced
1 cup mushrooms, sliced
1 cup 1% milk
2 tbsp all purpose flour
1 tsp nutmeg
2 tbsp becel
1/2 cup reduced fat feta cheese

Recipe Directions for Healthy Moussaka

  1. Preheat oven to 350 and spray a 9x13 casserole pan.

  2. Spray a large Fry pan with Pam and brown ground chicken, onions and garlic. If there is any grease from this step drain it before continuing with sauce (lean ground chicken or turkey won't have much to worry about).

  3. Add in tomato sauce, red wine, spices and let simmer for 30 minutes or until sauce thickens.

  4. Roast Eggplant slices in 350 oven for 15 minutes.

  5. Heat milk and margarine until steaming and then add flour.

  6. Whisk well so flour is incorporated and milk thickens.

  7. Add nutmeg and stir.

  8. Add Feta and stir constantly until melted into sauce.

  9. Layer Eggplant slices, mushrooms and sauce ending with sauce.

  10. Pour Bechamel sauce (milk mixture) over casserole and put in 350 oven covered for 20 minutes and then uncovered for another 15 minutes.
