Easy, healthy, and delicious muffins. Can sub oil for applesauce or add brown sugar for a more dessert-like muffin.

Recipe Ingredients for Healthy Morning Muffins

3 medium raw Carrots
1 cup Oats, Regular And Quick And Instant, Unenriched, Dry
1 medium (7" to 7-7/8" long) Bananas
1.25 cup Whole Wheat Flour
0.25 tsp Baking Soda
1 tsp Cinnamon, Ground
0.19 cup Cinnamon Classic Flavors
0.33 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 cup Craisins, Sweetened Dried Cranberries
1 large Egg, Whole

Recipe Directions for Healthy Morning Muffins

  1. 1. Preheat oven to 400 degrees. Coat a 12-cup muffin pan (or a 24-cup mini-muffin pan) with cooking spray. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon and salt until there are no lumps. Stir in oats and craisins. Add applesauce, eggs, milk, carrots and banana and stir until blended.

  2. Fill each muffin cup with batter. Bake until toothpick inserted in center of a muffin comes out clean (20-22 minutes for regular muffins, 15 minutes for mini-muffins). Serve muffins warm or at room temperature. To store, keep in an airtight container up to three days.
