Recipe Ingredients for Healthy Morning Glory Muffins

1/2 cups sugar
1 cup pastry flour
1 cup whole wheat flour
1/4 cup rolled oats
1 T. cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ginger
2 t. baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup coconut, unsweetened
3/4 cup golden raisins
1 large apple, grated
1 cup crushed pineapple
2 cups grated carrots
1/2 cup walnuts
2 large eggs
2 ounces egg whites
1 cup applesauce
1/4 cup honey
1 teaspoons vanilla
2 tablespoons wheat germ

Recipe Directions for Healthy Morning Glory Muffins

  1. Preheat oven to 350 F.

  2. Sift together flours, spices, salt, baking soda. Add oats.

  3. Whip eggs with sugar, Stir in vanilla, applesauce, pineapple, grated apple.

  4. Fold wet mix into dry, fold in raisins and walnuts.

  5. Fill muffin pans full. (regular muffins weigh 2 3/4 oz, mini's weigh 1 1/2 oz.-yield 39 mini's).

  6. Sprinkle with wheat germ.

  7. Bake 25-35 min. til spring back when pressed lightly.
