Recipe Ingredients for Healthy Morning Glory Muffins

3 cups Whole Wheat Pastry Flour
3 cups dry Old Fashioned Quaker Oats
1 cup flax seeds, ground
5 tsp Baking Soda
3 tsp Baking Powder
3 tbsp Cinnamon, Ground
2 tsp Nutmeg, Ground
4 cups Shredded Carrots
4 medium Apples, cored, shredded (with peels)
1 cup Raisins
1 cup pieces or chips Walnuts, English
1/2 cup Coconut Meat, Dried (Desiccated), Sweetened, Flaked, Packaged
1/2 cup Pineapple Chunks in 100% Juice, juice drained, crushed
2 cups Organics Applesauce Unsweetened
2 large Eggs, Whole
8 large Eggs, White
1/2 cup agave nectar, light

Recipe Directions for Healthy Morning Glory Muffins

  1. Preheat oven to 350 degrees. Grease muffin tins and set aside.

  2. In large bowl, sift together flour, oats, flax seeds, soda, powder, cinnamon and nutmeg. Stir in carrots, apples, raisins, walnuts, coconut and pineapple.

  3. In mixing bowl, whip egg whites until beginning to form peaks.

  4. In another bowl, mix whole eggs, applesauce and agave. Fold egg whites into mixture.

  5. Add flour mixture and egg mixture together, stirring until just combined.

  6. Spoon into well-greased muffin tins until 2/3 full. Bake at 350 degrees for 30-35 minutes. Cool for 5 minutes.
