An excellent lite alternative to grease laden potato salads!

Recipe Ingredients for Healthy mayo-free Potato Salad

3 lbs. (red new) potatoes
1 salt and pepper to taste
1/4 cup fresh chives
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon dijon mustard

Recipe Directions for Healthy mayo-free Potato Salad

  1. Scrub potatoes well (peel if you would like, I prefer not to, more nutrients that way!) and cut into bite-sized pieces.

  2. Place them in a pot and cover with enough water to cover them and add a large pinch of salt.

  3. Bring water and potatoes to boil keeping the lid on the pot. Once boiling lower heat so that the water is bubbling gently.

  4. Cook for about 12-15 minutes so that potatoes are tender enough for a fork to go through but not mushy!

  5. Drain then soak in cold water.

  6. While they are soaking, mix olive oil, vinegar, mustard and salt and pepper to taste.

  7. Take potatoes out of cold water once potatoes have cooled enough so they are slightly warm to the touch.

  8. Pour oil dressing over potatoes, then add snipped chives and toss.

  9. Serve and enjoy!
