The butternut squash made these mashed potatoes extra creamy and so flavorful that no milk or cream was used and only a bit of butter.

Recipe Ingredients for Healthy mashed potatoes

3 cups Potatoes, Boiled, Cooked In Skin, Flesh
2 g Roasted Butternut Squash
1 teaspoon olive oil
1 tablespoon butter

Recipe Directions for Healthy mashed potatoes

  1. boil potatoes

  2. cut squash in half

  3. remove seeds

  4. splash with olive oil

  5. roast in over until squishy

  6. drain potatoes

  7. remove squash from skin using a spoon

  8. mash together with butter and assorted herbs
