Very simple and easy (not to mention healthy :P)

Recipe Ingredients for Healthy Mashed Potatoes

4 lb. russet potatoes, flesh and skin
1 1/2 cup chicken broth
1 tsp salt
1 tsp pepper

Recipe Directions for Healthy Mashed Potatoes

  1. Bring 4 heavily salted cups of water to a rolling boil

  2. Place a steamer on the pot, then placed the potatoes (washed, preferably) in the steamer

  3. Steam for 15 minutes, or until they are easily mushed

  4. Remove potatoes from steamer and into a bowl

  5. Mash with the chicken stock, salt and pepper until desire consistency is found.
