Recipe Ingredients for Healthy mashed potatoe substitute

1 head of cauliflower
2 tablespoons of smart balance
1 tablespoon skim milk

Recipe Directions for Healthy mashed potatoe substitute

Rinse, and separate cauliflower. Cut off about inch of stem from bottom and discard. Chop cauliflower into small pieces, boil or steam until soft. Drain any water off. Place in bowl with butter substitute and milk . Beat with mixer until creamy resembling mashed potatoes.
