Mac and cheese with less calories

Recipe Ingredients for Healthy Macaroni & Cheese

1 cup uncooked whole wheat macaroni
1 head cauliflower
2 cups skim milk
1 onion
2 tablespoons butter
2 tablespoons flour
3/4 cup shredded cheese

Recipe Directions for Healthy Macaroni & Cheese

  1. Cook pasta and add cauliflower for the last 2 minutes of the cooking process.

  2. Cook onion in small amount of the butter

  3. Make Roux, stir in milk and let thicken, add 1/2 cheese and onion

  4. pour over pasta and cauliflower, put other 1/2 of cheese on top

  5. bake in oven for 20 minutes @ 350
