Yummy Mac and Cheddar Cheese Bake with Turkey Bacon.

Recipe Ingredients for Healthy Mac and Cheese

3/4 pound whole wheat elbow macaroni
2 tbsp olive oil
3 tablespoons whole wheat flour
1/2 teaspoon paprika
1/4 teaspoon dry mustard
1 pinch ground nutmeg
1 3/4 cups skim milk
1 1/2 cups grated cheddar cheese
1/4 teaspoon hot sauce or to taste
5 slices turkey bacon
2 slices diced whole wheat bread (toasted)

Recipe Directions for Healthy Mac and Cheese

  1. Boil the macaroni in a large pot of boiling salted water with a dollup of olive oil until al dente. Set aside.

  2. In a pot over medium heat, heat the olive oil on medium low. Add the flour, paprika, mustard and nutmeg and continue cooking for 1 minute, stirring constantly. Slowly whisk in the milk. Bring to a boil, stirring constantly. Simmer for 2 minutes. Add the cheese and stir until melted. Season with salt and pepper if desired. Add the macaroni and hot sauce, stirring to coat. Adjust the seasoning. If necessary, thin with a small amount of milk.

  3. Meanwhile, fry the bacon in a skillet until crisp. Drain on paper towels. Crumble into small pieces.

  4. Mix the diced toast with the bacon and sprinkle over top of macaroni and cheese.

  5. Toss in the oven on 350 for 20 minutes, or until the bread and bacon start to look a little crispy.
