Recipe Ingredients for Healthy lowfat blueberry muffins

1 cup quick-cooking oats
1 cup skim milk
1 cup blueberries
1 cup unsweetened applesauce
2 tbsp canola oil
2 egg whites
1 tsp vanilla
12 tbsp flax
1/3 cup brown sugar
1/2 cup flour
1/2 cup wheat flour
2 tsp baking powder
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Healthy lowfat blueberry muffins

  1. Combine oats and skim milk in large bowl, let sit for 20 minutes

  2. Preheat oven to 350 degrees

  3. Add brown sugar, applesauce, egg whites,and vanilla to the oat and milk mixture

  4. Whisk all dry ingredients together and add to the oat/milk mixture

  5. Fold in blueberries

  6. Scoop batter into greased muffin tins and bake for 27-35 minutes
