Wonderful texture, satisfying but could be sweeter. We topped with low-sugar jam. Considering adding tsp of jam to center of each muffin before baking, or nonfat cream cheese/low-sugar jam mixed filling. Do NOT OVERMIX. Wisk dry ingredients together well. Then FOLD in the wet to dry, just until combined. Fill greased or sprayed muffin tins 3/4 full. Bake until tops have browned peaks and edges, 12-15 min?

Recipe Ingredients for HEALTHY LOW-FAT APPLESAUCE-RAISIN MUFFINS

1 cups all-purpose flour
1/3 cup whole wheat flour
1/2 cup sugar
4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp ground nutmeg
1 large egg
3 tbsp melted unsalted margerine or butter or veg oil
1 tsp vanilla
1/2 cup nonfat plain yogurt
1/2 cup applesauce
1/8 cup raisins

Recipe Directions for HEALTHY LOW-FAT APPLESAUCE-RAISIN MUFFINS

  1. Preheat oven to 400 degrees

  2. Wisk all dry ingredients together WELL in large bowl.

  3. Wisk wet ingredients together well in medium bowl, being sure not to cook eggs with hot melted butter (cool down with yogurt/applesauce before adding egg).

  4. FOLD dry ingredients into wet ingredients until just mixed. DO NOT OVERMIX.

  5. Fill slightly greased muffin tins 3/4 full.

  6. Bake at 400 degrees until peaks and edges are browned, about 12-15 minutes.
