Extremely low carb, healthy coconut cookies full of healthy fats!

Recipe Ingredients for Healthy Low-Carb Coconut Cookies

84 grams Coconut
1 biscuit Complete Biscuit and Baking Mix
1/2 cup Pumpkin
3 tsp Baking Soda
1 large egg Organics Eggs Large
1/2 tbsp Coconut Oil
200 grams Sweetener

Recipe Directions for Healthy Low-Carb Coconut Cookies

  1. using a blender, shred the unsweetened shredded coconut so that it is a bit finer (it's okay if it isn't completely fine, some coconut flakes add more texture)

  2. melt the coconut oil (pop in the microwave for 30 sec) and mix with the sugar. Add pumpkin and stir

  3. mix all dry ingredients together

  4. combine wet and dry, and begin spooning onto a foil lined cookie sheet

  5. flatten batter into 2" diameter cookies to make 20 servings, make larger flat cookie shapes for bigger cookies (these DO NOT RISE and are very delicate because coconut flour does not bind well. )
