This recipe does NOT translate easily on this site, so the "ingredients" listed are not necessarily correct in order for the calories to be! And I usually serve this chili over 1/2 cup cooked brown rice (and 1/2 oz. of low-fat pepper jack cabot cheese when I can spare the calories).

Recipe Ingredients for Healthy, Low-Cal, Simple Chili

1 lb Fresh Ground Turkey - Lean
1/2 cups White Beans (can)
1/2 cups Kidney beans (can)
3 1/2 cups Diced Tomatoes, No Salt Added
7 cups diced tomatoes
4 ounces red onion
2 ounces yellow pepper
2 ounces red pepper
51 g jalapeno
1 cup frozen corn
2 tsp salt
1/4 cup tapioca
2 tbsp garlic, minced
3 tbsp chili paste

Recipe Directions for Healthy, Low-Cal, Simple Chili

  1. Add 3 14.5oz cans of diced tomatoes to a slow-cooker or crockpot. (I generally use 2 cans of the fire-roasted and 1 "no salt added" or vice versa, but you should use them according to your own sodium reqs.)

  2. Next add 1 14.5 oz can of both red kidney beans and white beans (I use Great Northern, but Cannellini or Navy's work great too). You want to be sure to RINSE and drain the beans thoroughly before adding them, because you can lose loads of excess sodium from a thorough rinsing.

  3. Spray down a non-stick skillet with cooking spray and saute the ground turkey stove-top. Once cooked through, add turkey to pot.

  4. In the same skillet, saute up diced peppers and onions. Add peppers and onions to the pot.

  5. Add 1 cup frozen corn right into the pot.

  6. Now its time to season. This varies for everyone, and you should make your chili your own by devising your own seasoning schema. Red Pepper Chili paste, pickled jalapenos, garlic, cayenne pepper, cinnamon, tabasco, sweet potatoes, beer - whatever you like, to whatever heat you prefer! I never make the "same" chili twice.

  7. Serving size is 1 cup.
