A light and refreshing pasta dish with fresh vegetables.

Recipe Ingredients for Healthy & Light Pasta Primavera

1 pound penne
1 pound portabello mushrooms
1 green pepper
1 1/2 cups yellow squash
2 cups diced tomatoes
1/2 tomato, chopped
3 tablespoons extra virgin olive oil
3 cloves garlic, chopped
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon oregano
1/2 tablespoon black pepper

Recipe Directions for Healthy & Light Pasta Primavera

  1. Place a large pot of water on to boil for the pasta.

  2. Chop the mushrooms, green pepper, squash, fresh tomato, and garlic.

  3. Heat the oil over medium heat in a large skillet.

  4. Add the garlic when the oil is warm and let it simmer for 1 minute.

  5. Add the green pepper and let it cook for 3 - 5 minutes (until it starts to brown).

  6. When the pot of water is at a rolling bowl, add the penne and cook according to package directions (generally about 10 minutes for al dente).

  7. Add the mushrooms and squash and continue to let the vegetables cook down for another 5 - 7 minutes (until the vegetables soften).

  8. Add the canned and fresh tomato and spices and cook for another 2 - 3 minutes.

  9. When the pasta is ready, drain the water, and toss the vegetable sauce / mixture with the pasta.

  10. (Optional and not included in recipe analysis: Top with grated parmesian or romano cheese.)
