Healthy version of traditional latkes

Recipe Ingredients for Healthy Latkes

1 lb sweet potato
1 zucchini
1 onion
4 tblsp canola oil
2 eggs

Recipe Directions for Healthy Latkes

  1. Grate (food processor) zucchini, sweet potatoes and onion

  2. Add 2 eggs, salt and pepper

  3. Fry in non-stick pan with a little canola oil
