Recipe Ingredients for Healthy Lasagna

200 g whole wheat pasta
500 g 1% cottage cheese
4 eggs
1 cup parmesan cheese
1/2 cup fresh parsley
2 tsp dried basil
1 tsp ground black pepper
3 tbsp extra virgin olive oil
1 1/2 cup diced carrots
1 3/4 cup diced onion
1 diced green pepper
250 g low fat mozzarella
2 1/2 oz baby spinach
1 tbsp garlic
2 cup diced mushrooms
700 ml Tomato, Basil & Garlic Pasta Sauce

Recipe Directions for Healthy Lasagna

  1. Blanch the lasagna noodles (I use 12 to fit in my pan). Set aside

  2. Combine cottage cheese, eggs, parmesan cheese, parsley, basil, and ground pepper in a bowl.

  3. Heat oil in a large sauce pan over high heat. Saute onions and garlic for 5 minutes. Add carrots, mushrooms, cook for 2 minutes. Add pepper and broccoli and spinach, cook 5 more. Combine with mix from step 2.

  4. Preheat oven to 350F

  5. Spoon 1/3 of pasta sauce into casserole dish (9x13). Then lay a layer of noodles. Then add 1/3 of the veggie mix. Then sprinkle with 1/3 of the mozza. Repeat until done.

  6. Bake for 50 minutes with tinfoil, 10 minutes without. Remove from oven and let stand for 20 minutes before serving.
