Healthy Lasagna Recipe

This takes a long time to make but is worth it. Roll the whole wheat pasta to the second to last setting on the pasta maker.

Recipe Ingredients for healthy lasagna


Filling:
1 eggplant
15 mushrooms
1/2 cup shallots
1 pound frozen spinach
15 ounces 2% cottage cheese
1 ounce parmesan cheese
2 tbsp flat leaf parsley
2 Tbsp fresh oregano
2 Tbsp fresh rosemary
2 Tbsp fresh thyme
2 1/2 cups tomato sauce
5 ounces whole wheat lasagna noodles
1 ounce parmesan cheese

Sauce:
1/8 cup parsley
1/4 cup olive oil
2 garlic cloves
1 onions
6 oz tomato paste
2 tsp. dried basil
1 tsp. oregano
1/4 tsp salt
1/4 tsp. freshly ground pepper
1/2 tsp. crushed red pepper flakes
28 oz whole tomatoes

Recipe Directions for healthy lasagna

  1. For two people working together:

While one person rolls out the pasta the other one roasts the eggplant and the mushrooms, thaws and drains the spinach, and adds the cooled vegetables and the herbs to the cottage cheese and parmesan (or ramano). Make the sauce by cooking the onions and garlic along with the parsley on low heat for about 15 minutes, stirring occasionally. Then add the rest of the ingredients, let it cook for a bit, then use a stick blender to liquify it.

  3. Layer: sauce - noodles - veggiecheese X3

  4. Cook for at least an hour, longer is better. Remove from oven at least 10 minutes before serving.
