Recipe Ingredients for Healthy Italian Chicken for 1

4 oz Fresh Boneless Skinless Chicken Breasts
1 medium raw Tomato Roma
1 pieces Garlic Cloves
1 tsp Italian Seasoning
1 cup Spinach
1 tsp, ground Basil, Dried

Recipe Directions for Healthy Italian Chicken for 1

  1. Grill The chicken breast with NO oil (best in a george forman so it doesn't stick)

  2. In a mixer (I use the tupperware chopper) Mix the Roma Tomatoe; Garlic Cloves; Italian Seasoning; Spinach, and Basil until it is a consistency that you can pour over your chicken but still have a few chunks

  3. Microwave the tomato mixture

  4. Serve over your grilled chicken - YUMMY and so low cal.
