I got this recipe from a flyer from Kroger - Substituted splenda brown sugar for the brown sugar. It doesn't make much difference per serving if you use the egg or the egg beaters. Nor if you use protein plus cereal or the soymilk. Probably because everything is /24 servings.

Recipe Ingredients for Healthy Honey Bran Muffins

1 1/2 cup raisin bran
1/3 cup boiling water
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup splenda brown sugar
1/3 cup unsweetened applesauce
1 egg or 1/3 cup egg beaters
1 cup skim milk
1/4 cup pecans
1/4 cup honey

Recipe Directions for Healthy Honey Bran Muffins

  1. Combine the cereal and the boiling water in a heatproof bowl and mix well. Let stand until cool.

  2. Mix the whole wheat flour, baking soda, baking powder and salt together.

  3. Beat the splenda brown sugar, applesauce and egg in a mixing bowl until creamy.

  4. Add the dry ingredients, cereal mixture and buttermilk and mix just until moistened.

  5. Fold in the nuts.

  6. Fill 12 jumbo muffin cups or 24 standard muffin cups sprayed with nonstick cooking spray, three-fourths full.

  7. Drizzle each jumbo muffin with 1 tsp honey or 1/2 tsp on the std muffin.

  8. Bake at 375F for 18 to 20 min or until toothpick comes out clean. Refrigerate leftovers.
