Recipe Ingredients for Healthy Hearty Breakfast Egg Bake

16 oz extra lean ham, diced
1 medium green bell pepper, diced
1 medium onion, diced
2 c. frozen hash browns
1 1/2 c. sharp cheddar cheese, low fat
8 eggs, large
1 c. 98% Fat Free Cream of Mushroom Soup
3/4 c. evaporated milk, non-fat
1 T. Hot sauce

Recipe Directions for Healthy Hearty Breakfast Egg Bake

  1. Dry saute ham in large skillet. Transfer to a 12" x 9" x 2" baking dish (sprayed with cooking oil). Dry saute the onions, and bell peppers until translucent. Sprinkle the onions, peppers, potatoes and cheese on top of the ham. In a large bowl, whisk the remaining ingredients; pour over the top. Cover and refrigerate overnight.

  2. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted comes out clean. Let stand for 10 minutes before cutting.
