A great and tasty granola bar recipe which can be made from any whole grain cereal. I used Nature's Path Organic Pumpkin Flax Plus Granola. If using other cereal, add 2 Tbsp ground flax meal to the recipe below.

Recipe Ingredients for Healthy Granola Bars

200 grams Organic Pumpkin Flax Plus Granola
2 cup dry Old Fashioned Quaker Oats
1 tbsp Cinnamon, Ground
1/2 cup Total 2% Greek Yogurt
1 cup Applesauce - Unsweetened
1 tsp Vanilla Extract
1 tbsp Honey, Strained Or Extracted
1 large Egg, Whole
2 oz Milk Powder Skim Instant

Recipe Directions for Healthy Granola Bars

  1. Preheat Oven to 350 degrees F. Crush the whole grain cereal and place in a medium-sized mixing bowl. Add the oatmeal and cinnamon. Set aside.

  2. In another medium-sized mixing bowl, combine the yogurt, applesauce, vanilla, honey, beaten egg, and skim milk powder. Add baking soda and baking powder to this mixture. Mix well.

  3. Gradually stir the crushed whole grain cereal and oatmeal into the yogurt mixture. Add the craisins and mix well.

  4. Make the granola bars by scooping three heaping tablespoons for each bar onto a parchment paper-lined cookie sheet. Shape into bars about 4 inches long.

  5. Bake at 350 degrees for 15-18 minutes. Makes 8 bars. Remove the granola bars from the oven and cool on a wire rack. Wrap each bar in saran wrap or foil, refrigerate and eat within a week or so. Or freeze the wrapped bars in a zip lock freezer bag. The granola bars should keep well for several months.
