Fruit Scones - use 1 cup of any berry.

Recipe Ingredients for Healthy Fruit Scones

1 cup flour
1 cup whole wheat flour
1/3 cup sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
4 T butter
1 egg
3/4 cup low-fat buttermilk
1 t vanilla
1/2 cup blueberries
1/2 cup raspberries

Recipe Directions for Healthy Fruit Scones

  1. Combine flour, sugar, baking powder, baking soda, salt. Cut butter into flour mixture.

  2. Add egg, buttermilk, and vanilla. Stir with fork until dough forms. Fold in fruit. Drop by tablespoonfuls onto baking sheet lined with silicone or parchment paper.

  3. Bake 12-14 minutes at 375 degrees.
