A healthier version of french toast. Topped with 1/2 cup of warmed mixed berries. NICE!!!!

Recipe Ingredients for Healthy French Toast

8 slice Fiber for Life 12 Whole Grains Bread
2 large Egg, White
1 large Egg, Whole
1/4 cup Soy Milk, Fluid

Recipe Directions for Healthy French Toast

  1. In a pie crust pan combine whole egg, egg whites, and soy milk. Whisk until combined. Place 1 slice of bread in mixture. Allow slice to really soak up mixture. Turn slice over and repeat on other side. Transfer to pan. Cook over medium heat for about 3-4 minutes on each side. It takes a little longer to cook due to the fact that the bread slices are so thick. Repeat with slices of bread until mixture is gone. 1 serving is equals 2 slices of french toast. Pour 1/2 cup of warmed mixed berries over the top and you have a great low calories french toast breakfast! I freeze the remaining slices that I have cooked up and save for a later date. Great to have on hand in the freezer.

  2. You can also add 1/4 teaspoon of vanilla extract or other extract flavors to brighten up the recipe.
