1 1/2 cup whole wheat flour
3/4 cup Flaxseed Meal
3/4 cup Oat Bran
1/2 cup Splenda Brown Sugar Blend
1/2 cup Splenda Granular
1 tsp. Baking Powder
2 tsp. Baking Soda
1/2 tsp. Salt
2 tsp. Cinnamon
1 1/2 cup Carrots, shredded
2 Apples, shredded
1 cup Walnuts, chopped
3/4 cup Skim Milk (or Soy milk)
1/2 cup Egg Beaters
1 tsp. Vanilla

Recipe Directions for Healthy Flaxseed Muffins (Nan's from Karen Seichen OFF) as Adapted by Lynn

  1. Mix together flour, Flaxseed Meal, oat bran, Splenda Brown Sugar Blend, Splenda Granular, baking soda, baking powder, salt and cinnamon in a large bowl.

  2. Stir in carrots, apples, nuts.

  3. Combine milk, Egg Beaters, and vanilla.

  4. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix.

  5. Fill muffin cups 3/4 full. Bake at 350 degrees for 15-20 minutes.

  6. Makes 15 medium muffins.
