Baked Eggplant Parmesan with mushroom-onion ragout

Recipe Ingredients for Healthy Eggplant Parmesan

1 large eggplant
1/2 c. onions, chopped
1 tbsp. garlic, minced
1 small onion, minced
1/4 c. red wine
1 tsp. fennel seeds
1 tsp. basil, dried
1/2 c. bell pepper, choped
1 1/2 c. mushrooms
1 c. vodka sauce
1 tomato, chopped
1/2 c. cheese
2 tbsp. grated parmesan cheese

Recipe Directions for Healthy Eggplant Parmesan

  1. Slice eggplant horizontally and sprinkle with salt (this draws moisture from the eggplant to the surface and removes tart flavor from seeds)

  2. Let sit for 15 min and then pat dry with paper towel

  3. Heat oven to 375 F

  4. Roast eggplant slices for 15 min until par cooked

  5. Transfer slices to a 14" casserole dish

  6. Ragout (cook while eggplant is roasting):

  7. Chop vegetables

  8. Sautee onions and peppers for 3-5 min on medium high heat

  9. Add mushrooms, tomato, vodka sauce, red wine, garlic and spices

  10. Let stew and stir every few minutes, for approx 20 min

  11. Lay eggplant slices in casserole dish and top with ragout

  12. Sprinkle with cheeses, creating two layers (like a sandwich)

  13. Bake in oven for 15 - 20 min, or until cheese is melted
