Egg Casserole using egg whites instead of whole eggs. This reduces the fat/calories. Also, used 5 slices of Swiss cheese that has half the calories (40 calories per slice instead of 80 calories). Green peppers, red peppers, and jalapenos give it a little more pizazz and add nutrients!

Recipe Ingredients for Healthy Egg Casserole

1 cup Milk, Nonfat, Fluid
3 serving Cook's Ham Steak
8 large Egg, White
2 large Egg, Whole
0.33 cup Whole Wheat Flour
0.5 cup, sliced Peppers, Sweet, Red
0.5 cup, chopped Peppers, Sweet, Green
1 pepper Peppers, Jalapeno
200 cal Deli Style Sliced Baby Swiss Cheese

Recipe Directions for Healthy Egg Casserole

Mix 8 egg whites and 2 whole eggs with one cup of milk and one third cup of wheat flour. Cube red peppers, green peppers, jalapenos, and (prepared) ham steak. Grease 9x9 inch pan with spray. Cover the bottom of the pan with approximately one cup of the egg/milk/flour mixture. Place half of the peppers and ham in the bottom of the pan over the egg mixture; cover with 3 slices of cheese. Slowly pour the rest of the egg mixture on top of the cheese and add the remaining ham, peppers, and cheese. Bake at 350 degrees until the top appears slightly crispy. Use the toothpick test to see if it's done!
