Similar in taste to a Tim Horton's Fruit Explosion muffin. If you have fresh or frozen berries on hand, add them as an additional ingredient to spoon into the mixture once divided between cups. Makes 12 medium-sized muffins.

Recipe Ingredients for Healthy and Delicious Morning Muffins

1 cup oats
1 1/4 cup 1% milk
1 egg
1/3 cup almond butter
1/4 cup honey
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup flour

Recipe Directions for Healthy and Delicious Morning Muffins

  1. 1. Mix milk and oats (preferably Bob's Red Mill 10 Grain Cereal). Let sit for 10 minutes while assembling other ingredients.

  2. 2. Mix egg, almond butter and honey until gooey and consistent.

  3. 3. Mix all ingredients. Spoon into greased muffin pan or muffin cups.

  4. 4. Bake in oven for 15 minutes at 400.
