Recipe Ingredients for Healthy Cowboy Cookies

1 cup coconut
1 cup whole wheat flour
1 cup raisins
1 cup Demerara sugar
1 tsp baking soda
1 cup carob
1/2 cup butter
1 dash salt
1 1/2 cups oatmeal
1/2 cup plain yogurt
1/2 tsp cinnamon
1/2 cup chopped walnuts
2 eggs
1/2 cup bran
1/4 cup ground flax seed

Recipe Directions for Healthy Cowboy Cookies

  1. Blend first 4 ingredients, then add and mix in eggs. Mix flour, soda, salt, cinnamon and bran together in a separate bowl. Blend into first mixture. Add raisins (soak in hot water first to plump them up, drain well), carob chips, oatmeal, nuts (walnuts are my favourite) & flax seed. Stir together well.

  2. Plop by teaspoons onto a good cookie sheet and bake at 350 for about 18 minutes or until golden brown.

  3. To freeze dough: drop by spoonful onto waxed paper on a cookie sheet. Freeze. Store in Ziploc bags. Bake as above.
