A 'healthified' version of mum's courgette quiche recipe. This is GREAT with tomato ketchup, either hot or cold the next day. Makes 4 huge servings.

Recipe Ingredients for Healthy courgette quiche recipe

3 eggs
3 egg whites
350 g courgettes
160 g onion
1 cup flour
1/3 c oil
225 g carrots
120 g tomatoes
175 g ham
2 oz cheese

Recipe Directions for Healthy courgette quiche recipe

  1. Beat eggs and whites together in a large bowl.

  2. Dice onion and ham, and shred carrots, courgette, cheese (reserving a little to sprinkle on top), and add to beaten eggs.

  3. Mix in oil, stir thoroughly, then add flour, stir.

  4. Bake at 180 celsius for as long as needed.
