This is great warm or reheated, a very plain cornbread so its great as a side dish. I cut mine into 16 slices instead of 12.

Recipe Ingredients for Healthy Cornbread from Allrecipes.com

1 cup flour
1 cup cornmeal
1/4 cup Splenda no calorie
1 tsp baking soda
3/4 tsp. salt
1 cup plain nonfat yogurt
2 large eggs

Recipe Directions for Healthy Cornbread from Allrecipes.com

  1. Pre-heat oven to 350 degrees

  2. Lightly grease an 8"x 8" pan

  3. Mix all dry ingredients.

  4. Add the yogurt.

  5. Beat the eggs in a small bowl, then add them to the rest of the recipe.

  6. Bake for 20 -25 minutes, or until it passes the toothpick test.
