An extremely healthy, vegetarian chocolate pie that substitutes TOFU for eggs.

Recipe Ingredients for Healthy Chocolate Pie Filling


Filling:
1/2 cup cornstarch
1/3 cup unsweetened cocoa
7/8 cup light brown sugar
230 g (1 cup) tofu
2 cups 2% milk

Recipe Directions for Healthy Chocolate Pie Filling

  1. In saucepan combine cocoa and sugar.

  2. In food processor combine tofu and 1 cup of milk. Process until smooth. Add tofu and milk mixture to sauce pan and cook over medium heat.

  3. Combine the last cup of milk with cornstarch and blend until cornstarch is dissolved. Add this to saucepan. When it starts to thicken reduce heat to low. Be patient, it takes a few minutes.

  4. Cook until it reaches desired consistency. Place mixture into crust let cool in fridge for at least an hour before serving.
