(This recipe is a very modified version of a cookie recipe found in the 2003 edition of "What to Expect While You're Expecting.")

Recipe Ingredients for Healthy Chocolate Cookies

1 1/4 cup oats
1/2 cup wheat germ
13 pitted dates
2 cups white grape juice
1 tablespoon bourbon (optional)
1 teaspoon vanilla
2 tablespoons oil
1/2 cup chocolate chips
1/2 cup chopped walnuts
1 egg white

Recipe Directions for Healthy Chocolate Cookies

  1. Preheat oven to 375 degrees Fahrenheit. Grind oats and wheat germ on low setting in a blender or food processor. Set aside. In a small saucepan, bring water, juice concentrate, and bourbon to a boil. Add dates, lower heat and let simmer for 15 minutes. Stir and mash while cooking is in progress. Mash completely until mostly smooth. Turn off heat. Add vanilla and oil. Stir. Pour date mixture into a mixing bowl. Quickly add oats, walnuts, and chocolate chips. Mix until cohesive. Add slightly beaten egg white. Drop by heaping ice-cream scoop-fulls onto greased cooking sheet (Butter flavor Pam is recommended). Bake for 11 mintutes. Makes 1 dozen cookies. (Makes 1 dozen)

  3. This cookie can be made three different ways. If the chocolate chips are mixed in with the oats and walnuts while the date mixture is still hot, it makes a very nice chocolate flavor. If the date mixture has cooled, the chocolate chips won't mix and you will have a truly "chocolate chip" cookie. This is good,too. Another, but less intensely chocolate, variation: Add the chips to the date mixture in the sauce pan shortly after the oil and vanilla. Add raisins instead of or in addition to the chocolate chips (if you must. I am not a raisin fan.)
