2 c scallions
2 c cilantro
40 lb romaine lettuce
4 oz white wine vinegar
8 oz extra virgin olive oil
2 oz lemon juice
1 oz salt
1 tsp pepper
4 gal 2% milk
4 gal peaches

  1. dice chicken into 1/4 inch cubes

  2. mix in scallions ,cilantro, almonds

  3. then toss in dressing
