Healthy chicken saag with no butter or dairy.

Recipe Ingredients for Healthy Chicken Saag

4 Thigh Chicken
4 cup Spinach
2 medium (2-1/2" dia) Onions
3 clove Garlic
2 tbsp Curry Powder
3 tsp Garam Masala
0.5 tsp Cayenne
2 tsp Ginger, Ground
2 tbsp Vegetable Oil, Canola

Recipe Directions for Healthy Chicken Saag

Cook spinach in boiling water for 2 minutes, drain and blend in blender or food processor until it becomes a smooth paste. Brown chicken in pan with oil, remove to plate. Brown onion, garlic and all spices in pan that was used to brown chicken add a can of crushed tomatoes and a half cup of water. Return chicken to pan and simmer for 30-40 minutes. Remove chicken to a clean plate (do not use same plate that had browned chiicken on earlier chicken would have still been raw). Add purreed spinach to pan, season to taste with salt pepper and more spices if you like. Return chicken to pan, simmer for 10minutes and serve over brown rice.
