Very delicious! Full of vegetables and extremely healthy. Perfect for lunch or dinner.

Recipe Ingredients for Healthy Chicken and Raisin CousCous

1 red pepper, diced
6 green onions, chopped
1/2 cup slivered almonds
1 apricot, diced
100 g sultanas
2 cups couscous
1/2 kg chicken breast, diced
2 tbsp lemon juice
1/2 cup parsley, chopped
1 garlic clove, chopped
1 sweet potato, diced
2 tbsp chicken stock

Recipe Directions for Healthy Chicken and Raisin CousCous

  1. put chicken and onion into frying pan and cook until golden.

  2. add the red pepper, almonds, apricot, sultanas, lemon juice, parsley and garlic.

  3. meanwhile bake the sweet potato.

  4. once the vegetables and chicken are cooked, turn heat off or on very low.

  5. cook the couscous in chicken stock.

  6. once the couscous is ready, add it to the vegetables and chicken.

  7. add the sweet potato.

  8. mix it around and serve. serves approximately 7.
