Recipe Ingredients for Healthy Chicken Pot Pie

16 oz (raw) Chicken
1.5 cup, chopped Carrots
1 cup Frozen Sweet Peas
0.5 cup, diced Celery
3 tbsp Butter
0.33 cup, sliced Onions
0.33 cup Gold Medal Unbleached All Purpose Flour
1 tsp Salt, Table
0.25 tsp Pepper, Black
1.75 cup Organic Free Range Chicken Broth
0.67 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 crust Pillsbury Pie Crusts All Ready Rolled

Recipe Directions for Healthy Chicken Pot Pie

Preheat oven to 425. Combine chicken carrots, peas and celery in a sauce pan. Cover with water and boil until chicken is no longer pink and vegetables are tender. Remove from heat, drain and set aside. Cook and stir onions in butter in the sauce pan over med heat until soft and translucent. Stir in flour, salt and pepper. Slowly stir in chicken broth and milk. Simmer over med-low heat until thick. Roll out your pie crust into pi dish. Pour chicken mixture into bottom of crust. Pour hot liquid over chicken mixture. Cover with top crust and seal. Make vent holes. Bake at 425 until crust is golden and inside is hot and bubbly. 30 to 35 minutes. cool for 10 minutes before serving.
