A healthier version of the Chicken Cordon Bleu. Makes a great lunch!

Recipe Ingredients for Healthy Chicken Cordon Bleu with Granny Apple Salad

1 slice Nature's Own 100% Whole Wheat
6 oz Deli Select Smoked Chicken Breast
2 oz Branded Deluxe Ham - 42% Lower Sodium
2 serving Dijon
4 oz Sharp Cheddar Cheese
1 tbsp Vinegar red wine
0.25 oz Tarragon
2 endive Belgian Endive
8 oz(242 g) Granny Smith Apples

Recipe Directions for Healthy Chicken Cordon Bleu with Granny Apple Salad

  1. Overlap 2 slices of bread by 1 inch. Flatten with rolling pin adding a little extra pressure over the lapped area. Repeat to make 4 rectangles.

  2. Layer with chicken followed by ham. Make sure it's evenly layered over bread.

  3. Spread 1/4th of the dijon mustard between the rollups.

  4. Final layer will be 1/4 of your cheese.

  5. Roll each up like a carpet as tightly as possible. Wrap each roll in a piece of parchment paper.

  6. Place rolls in microwave and heat on high for 1 to 2 minutes.

  7. Spray pan with olive oil and remove rolls from parchment paper. Place in pan. Cook 4-5 minutes or until browned evenly.

  8. In a large bowl, mix 1 tbsp of mustard, the vinegar and tarragon. Add endive and apple slices and toss to coat.

  9. Devide between 4 serving plates.
