This is my healthy take on the delicious Chicken Cacciatore. It's not as delicious as Buca di Beppo's but it can heal my cravings for it. And it's only 5 WW points per serving.

Recipe Ingredients for Healthy Chicken Cacciatore

2 cloves garlic, minced
1/4 cup onion, julienne
2 tbsp extra virgin olive oil
1/4 cup green pepper, julienne
1/4 cup red pepper, julienne
4 Roma tomatoes, grilled, peeled and diced
1 cup carrots, baby, halved diagonally
2 tbsp ketchup, to taste
1 tbsp Louisiana hot sauce, to taste
1/4 tsp salt, to taste
1 1/2 cup chicken broth
1 cup mushroom
9 oz chicken breast, skinless and boneless

Recipe Directions for Healthy Chicken Cacciatore

  1. Pound chicken breast to make it a little bit thin like 1/4 inch thick. Then cut it into serving sizes.

  2. Heat olive oil in a skillet.

  3. Brown chicken breast - 5-6 minutes on each side. Take it out and set aside.

  4. In the same skillet, saute garlic then onion and peppers.

  5. Add tomatoes and sauteed for a minute.

  6. Add carrots and sauteed for a minute.

  7. Sprinkle salt, cover skillet and let simmer for 2 minutes.

  8. Add ketchup and hot sauce. You may add more hot sauce if you want more kick.

  9. Add chicken broth, cover and reduce sauce for about 5 minutes.

  10. Add chicken breasts and let it simmer for another 2 minutes.

  11. Serve on top of whole wheat penne or steamed brown rice.
